If we have a good fishing season up in Alaska, I like to have a bunch of my salmon smoked to get us through the off-season.  The salmon didn’t run like they usually do last year, so I had to purchase my smoked salmon for this recipe.  I prefer to use King or Coho, but you can use any kind your local grocer has on hand.  This is my “go to” dinner party appetizer dip.

Prep Time: 20 minutes

Yields: 1.5 cups

¼ C. Mayonnaise (regular or light)

4 oz. Cream Cheese (regular or light)

1 Tbsp. Capers – rinsed and drained

1 ½ Tbsp. Shallot – minced

1-2 Tsp. Fresh Lemon Juice

½ Tsp. Horseradish OR ½ Tsp. Coarse Grain Mustard (whatever you have on hand)

5 oz. Smoked Salmon – divided in half

½ Tbsp. Fresh Parsley – chopped

Crackers

In a food processor or a blender, combine mayo, cream cheese, capers, shallot, lemon juice, horseradish and 2.5oz of smoked salmon.  Process until mixture is smooth, about 30 seconds.

Transfer to a small mixing bowl.  Add remainder of salmon crumbled or chopped and parsley to mixture.  Give a couple of stirs and put into serving dish.
