A GREEN salad/side for St. Patrick’s Day! For those who don’t prefer cooked cabbage…

If you’re not a huge fan of radishes, this is the salad for you! The radishes are
cooked down and have a soft texture and no peppery bite!
Prep Time: 10 minutes
Cook Time: 15 minutes
Serves: 4-6
INGREDIENTS:
1 ½ Lb. Green Beans – washed & ends removed
1 ½ Batch Radishes – washed, greens and tails removed – quartered
¼ C. Extra Virgin Olive Oil
2-3 Cloves of Garlic – sliced thin
½-1 Tbsp. Honey or Agave Nectar (if you prefer)
¼ – ½ Tsp. Red Chili Flake (more if you prefer)
Salt & Pepper (to taste)
2 Bacon Slices (optional)
Bring salted pot of water to a boil. Toss in green beans and cook at a rolling boil for 3-5 minutes. Remove from pot with a slotted spoon and put right into the ice water bath to cool quickly. Drain thoroughly once beans are cooled.
Add oil to a skillet and turn heat to medium. Once hot, add in quartered radishes, green beans, garlic, and chili flakes. Cook for approximately 5 minutes or until veggies have softened. – This is where you can add your cooked diced BACON!
Add in honey and stir to coat the veggies. Cook for 2-3 minutes. They should just start to caramelize.
Salt and pepper to taste and then transfer to a serving bowl.
