Shrimp in Garlic Sauce & Steak – a Surf & Turf Favorite
Salty Dog Boaters, Try This Chef’s Recipe: Shrimp in Garlic Sauce & Steak. You can make an impressive dinner in less than half an hour with this classic surf & turf recipe. By cooking the steak first then making the shrimp & sauce in the same pan, the shrimp mixture picks up some of the flavor of the meat which makes for a very tasty seafood meal. With steak, shrimp and wine on the ingredients list, this dinner is a bit of a splurge but it’s well worth it as this combination of flavors really bring out the best in each other. It is recommended that you use shrimp that hasn’t been cleaned because it loses a lot of its flavor and texture if it’s peeled before frozen.
Ingredients:
12-16oz steak (cut of your choice)
8oz large shrimp
1 tablespoon lemon juice
3 tablespoons olive oil
3 tablespoons butter
3-4 cloves minced garlic
1/4 cup dry white wine
1/4 cup half & half (or heavy cream if you want a creamier sauce)
salt & pepper
Preparing the Meal
- Preheat pan, cast iron if possible. Peel/devein shrimp if they aren’t already, then rinse them and drain on paper towel. Put shrimp in bowl and toss with lemon juice. If you are using larger shrimp, cut them in about 1″ sized pieces. If you’d prefer not to cut them, note that it may take an extra minute or two to cook them through.
- Coat each filet with small amount of olive oil and salt and pepper. Turn heat to medium-high and cook filets a few minutes on each side, depending on size of steak and how done you’d like it to be. Set them aside and cover them loosely.
Use a Cast Iron Pan if Possible
- Reduce heat to medium. Carefully add 2 tablespoons butter and remaining olive oil. Add garlic and cook two minutes. Add wine.
- Reduce wine to half original amount, for about 3 minutes. Add half & half, shrimp, remaining butter. Cook until shrimp are pink, about 2 minutes.
- Top steaks with shrimp and sauce. Enjoy!
