Potato & Chicken Teriyaki – A Perfect Healthy Entree
NW Boaters: Try this Chef’s Recipe: Potato & Chicken Teriyaki is a perfect balance of protein and starch, and this recipe might be one of our easiest to make yet. A perfect blend of eastern and western staples, it goes great with vegetables & salad, garlic bread, or your healthy side of choice. Rice is a great option too, as the potatoes will mix with it better than you might expect. Heck, some even like to add pre-cooked mixed vegetables near the end for a quick stir fry of sorts. Saving some of the sauce you make is definitely recommended as a pour-over for your entree as well as your sides in any case, especially if you go the rice route. Either way, you’re going to love this easy-to-make and easy-to-eat meal.
Ingredients
4 medium potatoes cut into thin wedges or cubes
1 lb boned and skinned chicken breasts, cut into long ½ inch thick slices or desired shape
2 Tbsp. vegetable oil
½ cup sliced green onions
¼ cup prepared teriyaki sauce*
Mixed vegetables (optional, pre-cooked recommended)
Preparing the Meal
- Microwave potatoes on high for 8 minutes. While the potatoes are cooking, toss and brown chicken in oil in a large skillet over high heat for 5 minutes.
- Add potatoes; sauté and toss until potatoes are lightly browned.
Add Vegetables for an Easy Stir Fry
- Add onions and teriyaki sauce, toss until heated through. Add mixed vegetables if desired and mix until heated through.
