Alaskan Blackened Halibut with Garlic Mashed Potatoes – A Perfect Combo
NW Boaters, we are all… so very over this rain in the PNW this winter and spring. Enjoy this: Alaskan Blackened Halibut with Garlic Mashed Potatoes. This recipe combines delicious Wild Alaska Halibut with creamy garlic mashed potatoes, and everything is prepared in a simple, healthy fashion. Once you have sprinkled the spices on, press them in as you will lose some of the spices when you cook it. Be sure to keep your kitchen well-ventilated during the blackening process, as otherwise you might find yourself choking on smoke. You can also grill the halibut if you prefer, but keep in mind that the Alaska Halibut cooks very quickly!
Ingredients for Halibut
2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon cayenne pepper
1 tablespoon pepper
2-1/2 teaspoons paprika
4 halibut fillets (4 ounces each)
2 tablespoons butter
Ingredients for Garlic Mashed Potatoes
8 medium red potatoes, quartered
3 garlic cloves, peeled
2 tablespoons butter
1/2 cup fat-free milk, warmed
1/2 teaspoon salt
1/4 cup grated Parmesan cheese
Preparing the Meal
- In a large resealable plastic bag, combine the first eight ingredients for the halibut. Add fillets, two at a time, and shake to coat.
- Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are very tender.
- Drain well. Add the butter, milk and salt; mash. Stir in cheese. Keep warm.
Expect 3-4 Minutes Per Side for the Halibut
- In a large cast-iron skillet, cook fillets in butter over medium heat for 3-4 minutes on each side or until fish flakes easily with a fork.
- Plate and serve with mashed potatoes and any other sides of choice.
