After 10 great days of fishing, Trig and I found ourselves with an abundance of Salmon and a shortage of freezer space. Smoked Salmon was the obvious answer. Luckily we were still in Klawock and our friends have a great connection with WildFish Smoke Shop and Cannery so we decided to take a load of fish over to them to have smoked and canned. We were a little nervous about their ability to process our fish due to the stories of all the fish being caught throughout South East Alaska, but they graciously accepted out fish and squeezed it into their very busy schedule. WildFish does an amazing job smoking and canning fish so if you find yourself in the Klawock area with a surplus of Salmon be sure to check them out!

INGREDIENTS:

1/2# smoked salmon (canned or fresh, for this I used fresh so that I didn’t have to put the pack in the freezer but the canned works equally as well)
1/4 cup capers
1/2 red onion sliced
2 T cream cheese ( in small chunks)
6 eggs
1 cup 1/2 &1/2
Dill to taste
Salt and pepper to taste

METHOD:

1. Spray or butter a pie pan. Preheat the oven to 350.

2. Place chunks of smoked salmon along with the red onion, capers, and cream cheese into the pan.

3. Sprinkle the dill over the ingredients in the pie pan.

4. In a mixing bowl mix together the eggs and half and half until well mixed. Season with salt and pepper.

5. Pour the egg mixture over the salmon mixture.

6. Bake until the eggs are set. Approx. 30 minutes.

I served this for breakfast with half of a bagel, cream cheese, capers, and red-wine pickled onions. It would also make a great lunch with a green salad or could be made in mini muffin to as an appetizer.

Alisa has been cooking professionally around the Seattle area for the past fifteen years, the last six of which have been spent aboard a variety of luxury yachts cruising the Pacific Northwest! Alisa thrives on the abundance of local products available in the area and enjoys creating memorable dining experiences at every opportunity! She customizes each and every meal to the individual needs of VIAGGIO’s guests, and loves taking time to share her passion and knowledge for food with anyone that is interested. Alisa has been known for giving impromptu cooking classes on cooking what you catch, fresh pasta making, and seasonal cooking.
