As the temperature starts to drop and the holidays approach I find myself making a bunch of soups.  They are quick, easy, and you can utilize whatever you have on hand.   This soup came about on our last charter of the season as an impromptu lunch on a drizzly day utilizing the leftovers in the fridge.

INGREDIENTS:

1/2 jar of salsa
1 quart chicken broth
1 chopped sweet potato
1 leek chopped
4 medium carrots, peeled and chopped
2 bell peppers chopped
3 ears corn ( corn cut off the cob and the cobs reserved)
1 package chicken breakfast sausage chopped
1 cup sliced salami diced
2 cloves garlic ( minced)
1 jalapeño diced
Olive oil
Salt to taste
Pepper to taste
Cumin to taste
Chili powder to taste

METHOD:

1. Heat olive oil in a pan and add the salami and cook until crispy.

2. Add the remainder of the vegetables and spices ( everything except the salsa, chicken broth, sausage, and corn cobs) and cook until the vegetables begin to sweat and become fragrant.

3. Add the chicken broth, salsa, and corn cobs and gently simmer until all the vegetables are tender ( about 25 minutes).

4. Remove the corn cobs

5. Add the chicken sausage and cook until heated thru.

6. Taste and add more seasonings as desired.

7. Serve and top with your choice of fresh tomatoes, avocado, tortilla chips, fresh cilantro, sour cream or cheese.

Alisa has been cooking professionally around the Seattle area for the past fifteen years, the last six of which have been spent aboard a variety of luxury yachts cruising the Pacific Northwest! Alisa thrives on the abundance of local products available in the area and enjoys creating memorable dining experiences at every opportunity! She customizes each and every meal to the individual needs of VIAGGIO’s guests, and loves taking time to share her passion and knowledge for food with anyone that is interested. Alisa has been known for giving impromptu cooking classes on cooking what you catch, fresh pasta making, and seasonal cooking.
