As fall starts to set in, soup finds its way on to the menu with greater frequency. After a successful summer in Alaska, we have an abundance of salmon on board and I am always looking for a new way to use it. This soup is a great one pot dish that is hearty enough to be a meal on its own or as a fun, intensely flavored start to any meal!

INGREDIENTS:

2 Tablespoons Coconut Oil (you can substitute vegetable oil if you do not have coconut oil)
2 sweet potatoes peeled and diced
1 red bell pepper diced
1 onion diced
1 jalapeño minced (optional)
1 # salmon skin removed and diced
1 can coconut milk
4 cups chicken broth
3 Tablespoons red curry paste
3″ chunk of lemongrass split in half
1 ” chunk of ginger peeled and minced
3 cloves of garlic minced
1 lime zested and then juiced

METHOD:

1. Heat up the coconut oil in a stock pot.

2. Add the garlic, ginger, lemongrass, jalapeño, onion, and lime zest and mix together. Cook for a few minutes to start to blend the flavors.

3. Add the bell pepper and sweet potatoes and cook for an additional minute or two.

4. Add the curry paste and cook for 2-3 minutes.

5. Add the chicken broth, lime juice, and coconut milk and bring to a simmer. Cook for 20-30 minutes until sweet potatoes are tender.

6. At this point you can hold the broth warm until you are ready to serve. 5 minutes before serving add your salmon and allow it to gently cook in the simmering broth.

7. Taste and adjust for seasoning. Add salt if necessary.

Note: This soup would be delicious served with fresh cilantro, basil and mint!

Alisa thrives on the abundance of local products available in the area and enjoys creating memorable dining experiences at every opportunity! She customizes each and every meal to the individual needs of VIAGGIO’s guests, and loves taking time to share her passion and knowledge for food with anyone that is interested. Alisa has been known for giving impromptu cooking classes on cooking what you catch, fresh pasta making, and seasonal cooking.
