VIAGGIO is back cruising the seas of the San Juan Islands. We pushed the start date back by a couple days due to 25+ knot winds, which was definitely the right call because today we picked up our guests in Anacortes and headed out onto calm seas and sunshine to seek out some local adventures! We have a couple young kids aboard so adventures are around every corner. We have seen porpoise, went for a hike on a “remote” island, and sat on deck and watched the bubbles kick out in the boat wake! If you ever find yourself taking boating for granted invite a couple youngsters along and experience boating through their eyes! We typically start out most charters with a steak dinner (mostly due to Captain Trig’s obsession with the fillets we purchase from MacDonald Meat Co.) as well as this Blue Cheese Horseradish Butter.

I made this butter for steaks aboard the yacht Trig and I worked on a few years back and he has all but demanded that it be served with every fillet cooked! One of the nice things about this butter is that it can be made in a large batch and frozen so that it is on-hand at a moments notice.

INGREDIENTS:

1 stick butter
8 oz of your favorite blue cheese (feel free to use a combination of blue cheese, I like to mix a creamy blue cheese with a smokey blue cheese)
2 Tablespoons horseradish
Black pepper to taste

On occasion I will add some fresh herbs, basil is a nice addition, or some fresh thyme and rosemary.

METHOD:

1. Place all the ingredients in a bowl.

2. Allow the butter and blue cheese to warm to room temperature.

3. Mix until everything is well combined.

4. Taste and adjust your seasonings. Place into a jar, or roll into a log in plastic wrap (see photo) this can be stored in the fridge for about a month or in the freezer for several months.

Alisa has been cooking professionally around the Seattle area for the past fifteen years, the last six of which have been spent aboard a variety of luxury yachts cruising the Pacific Northwest! Alisa thrives on the abundance of local products available in the area and enjoys creating memorable dining experiences at every opportunity! She customizes each and every meal to the individual needs of VIAGGIO’s guests, and loves taking time to share her passion and knowledge for food with anyone that is interested. Alisa has been known for giving impromptu cooking classes on cooking what you catch, fresh pasta making, and seasonal cooking.
