photo 3 VIAGGIO has arrived back into the Puget Sound! After an incredible summer cruising Southeast Alaska it is bittersweet to be back home. Luckily we have a 10 day charter cruising the San Juan Islands to ease us back into reality of being home. Both Trig and I feel very fortunate to have a job that feels like a vacation that we don’t want to end! For the next ten days we have a great group of guys visiting from the east coast so we are eager to show off the beauty of the Pacific Northwest.  They have requested a low carb diet as much as possible so here is a recipe for a quick and easy breakfast that can be made for a group and breaks up the monotony of standard egg dishes! photo 1

INGREDIENTS:

12 slices of proscuitto ( Costco sells a 2 pk, thinly sliced and nicely separated with wax paper that works great) 12 eggs 1 avocado ( diced) 1/2 cup shredded pepper jack cheese Salt and pepper to taste ( use a light hand on the salt as the proscuitto can be a bit salty) Salsa for serving if desired.

METHOD:

1. Preheat oven to 400. Lightly spray or oil 6 ramekins or muffin tin cups. 2. Lay two slices of Proscuitto in alternating directions into a ramekin or large muffin tin. Be sure to not have any holes the egg can run out of 3. Crack 2 eggs into each cup.  ( if you prefer scrambled eggs you can scramble the eggs and pour into the cups) 4. Sprinkle avocado over top of the eggs. 5. Season with salt and pepper. 6. Top with shredded pepper jack cheese. photo 2 7. I like to place the 6 ramekins onto a parchment lined baking sheet to make it easier to put in and out of the oven and  protect the oven against any drips. 8. Bake for 15-25 minutes depending on how you like your eggs. 9. Serve with salsa and hot sauce if desired, add a small fruit salad and a piece of toast for a quick and hearty show-stopping breakfast for a group!

Alisa has been cooking professionally around the Seattle area for the past fifteen years, the last six of which have been spent aboard a variety of luxury yachts cruising the Pacific Northwest! Alisa thrives on the abundance of local products available in the area and enjoys creating memorable dining experiences at every opportunity! She customizes each and every meal to the individual needs of VIAGGIO’s guests, and loves taking time to share her passion and knowledge for food with anyone that is interested. Alisa has been known for giving impromptu cooking classes on cooking what you catch, fresh pasta making, and seasonal cooking.
